Tasting Notes :
Complex and age-worthy expression of Sauvignon Blanc. Hand-harvested and gentle whole bunch pressing has created a fine textured palate with exceptional length. This serious Sauvignon Blanc is quite unlike most others made in New Zealand, and more in common with the complex, textural white wines of Bordeaux. Grown on our Redstone Vineyard in the Bridge Pa Triagnle appellation in Hawkes Bay, the fruit is hand harvested and whole bunch pressed, wild fermented in predominantly older French oak barrels, and subsequent barrel age on full yeast lees for 9 months, has created a subtly aromatic, complex and textural wine that is age-worthy and ideally suited to be enjoy with food. Great with a range of seafoods including richer dishes such as scallops or crayfish. Try with fresh and vibrant salads and vegetables including fennel, tomato, basil, parsely, rocket, capers, green beans and asparagus and good quality Mozzarella cheese. It also works well with richer poultry dishes and butter based sauces such as beurre blanc. Enjoy this wine now rather than cellaring as it is unlikely to benefit from further aging.
